Winter Wonderland

In thinking about the seasons, I am left to contemplate the energy surrounding this time of year. When I look around, it is getting cold and dry. The plants and trees are going within to prepare for spring. I find myself going within as well and wanting to plan for my future. A problem arises when I allow my mind to race about thinking about all the tasks I should be completing, but energetically, I am not there. I love this time of year with the holidays and gathering with family and friends. I love the excitement in my children as we attend more social events, eat large meals with those we love and display all the holiday decorations. Even picking out a tree is a beautiful event. The house smells of greenery, cinnamon and cloves. The warmth of the fire glowing in the fireplace even brings a feeling of peace and contentedness. In all of these wonderful experiences, I can still find myself absorbed in doing and performing, especially when having guests over to celebrate.

This year is somehow different, in that I am really feeling the peacefulness of just being. I don't mean letting things go and not accomplishing any tasks, but rather, being ok with the quietness and calmness of my being. This is the time to go deep inside and allow myself to feel all those emotions that have been pushed aside during the busier times of year. With every change of season, there is an opportunity to embrace a different part of one's self, and if we fully embrace it, we will come out of the season prepared for the next season of life. Animals do not fight the seasons or discuss them at length and figure a way to get around it. Why do we as humans insist on staying up late, performing endless tasks, using technology, such as lights, television and computers to emulate daylight? No wonder so many people suffer from anxiety, depression, stress, obesity and heart disease. We need to pay attention to the seasons, they give our bodies, minds and souls the rest they need. We need to embrace our fears and move through them, so they pass along instead of binging them with us like a carry on bag everywhere we go. Winter is the time for seeing what benefits and what does not benefit us. It is a time for deep reflection and for planning for the future. Figure out what seeds you would like to plant in the spring, for growth in the summer and for harvest in the fall. Personally, I have big plans for next year, I have already begun to choose my seeds wisely and it is going to be a beautiful upcoming year!

Let Them Play!

Check out this article on the importance of playing for children. Our children need to play again, and not organized play like team sports or physical education. The benefits of imaginative, free play are numerous. Playing supports learning, creative and social skills, and abstract thinking. Our schools need to bring back recess, and we need to leave the TV, video games and movies for only special occasions. Lack of play is seriously affecting our children's social skills, problem solving and creative capabilities, not to mention their health. American children have obesity problems and Attention Deficit issues.

Perhaps parents and teachers need to model the appropriate behavior as well. Imagine all the adults and children outside again playing or inside making new discoveries. Maybe we all need to get in touch with our inner child and learn to play again. Get on the floor and pretend you are a panther slinking through the forest, or stand tall with a pot on your head and a broom stick in your hand and pretend you are Queen of your domain. The kids will love it and perhaps they may even help with dinner and cleaning if it is made into play. Pretend you are the steam engine of a train when loading kids in the car for school, and all the children can be different cars on the train with the caboose bringing up the rear. The children will laugh and pile in the car and you won't have to yell five times to get in the car. Think of how wonderful the world would be if everyone played!

Fruit of Kings!

Also known as pineapple, the "Fruit of Kings" is packed with nutrition that is hard to surpass in the produce department. Pineapple is high in Vitamin C, which makes it a must have as we enter the cold and flu season. Vitamin C helps protects us from free radicals and fights seasonal illness like colds and flu. Pineapple also aids in digestion, reduces blood clotting and assists the body in bone development. An excellent item to add to fruit salad or eaten alone, pineapple is beneficial for old and young alike. The Manganese contained within this royal fruit aids in energy production, as well as preventing osteoporosis and bone fractures. It also contains Vitamin B1, which further elevates energy productions. Besides Vitamin C, pineapple contains Bromelain, an antibacterial enzyme that suppresses inflammation and coughs, and loosens mucus. Other benefits of pineapple include antiviral properties and significant levels of potassium.

When it comes to consuming pineapple, fresh is best. Canning causes the pineapple to lose some of its beneficial health properties. When purchasing a pineapple, give it the "sniff" test, if it smells sweet, it is purchase worthy. If it doesn't smell sweet, put it back and sniff another. Pineapples stop their ripening process when picked, so choose wisely. When storing it at home, leave it on the counter upside down, which will allow all the sweet juices to trickle down to all areas of this delicious tropical fruit.

Pineapple is a must have in sweet and sour stir fry dishes. It lends well to being eaten alone or with other fruits as well. If adding pineapple to any dairy such as yogurt or cottage cheese, make sure you add it right before eating, as the properties of the fruit change when mixed with dairy. Personally, I like to cut it up and keep it in the refrigerator for easy snacking on the go. Children love the sweet taste of pineapple as well and eating it frequently will assist them in their bone development and Vitamin C intake. We could all benefit from this "Fruit of Kings"!

Coincidences, I think not!

As I sit at my computer, doing yet another graduate study assignment, I am listening to an audio CD from Deepak Chopra, "The Spontaneous Fulfillment of Desire", which is about harnessing the infinite power of coincidence. A wonderful and supportive friend brought it over and I am soaking up every utterance. Deepak is inspiring and poignant in his analysis of the arrangement of the universe, it is truly inspiring and under the umbrella of Naturally Living.

Is Happiness Abnormal?

Ok, now I have seen it all, or at least I think I have, which remains to be seen. Anyway, enough of the philosophizing. Here is an link to an article that indicates a proposal has been made that happiness could be classified as a psychological disorder.

Quoting the article: "In a review of the relevant literature it is shown that happiness is statistically abnormal, consists of a discrete cluster of symptoms, is associated with a range of cognitive abnormalities, and probably reflects the abnormal functioning of the central nervous system." I find this hilarious, what do you think? Perhaps we need to redefine the definition of abnormal.

According to the text, it is not scientifically relevant that happiness is seen as positive and not negative, it could still be classified as a disorder. Wow, I think that about says it all....

Vitamin D and Our Children

We have talked about the benefits of receiving daily sunlight in order to receive ample Vitamin D. Now the American Academy of Pediatrics is recommending children receive an increase in Vitamin D supplements in their report on Prevention of Rickets and Vitamin D Deficiency in Infants, Children, and Adolescents. Apparently, our children are not receiving adequate amounts of this necessary nutrient.

Children are not exposed to sunlight as much as children in past generations. There are many reasons for this: schools removing outside recess and PE from their schedule, children home alone after school staying inside, children performing more sedentary inside activities like watching TV and playing video games, and using excessive amounts of sunscreen to avoid burning and skin cancer. This is having an impact on our children's current and future health. Lack of Vitamin D affects the immune system and is linked to Type 1 Diabetes, as well as a condition known as rickets.

The American Academy of Pediatrics is recommending more Vitamin D supplements for infants, children and adolescents, in order to offset any future health problems. Children who live in colder climates and who have darker skin are more at risk for Vitamin D deficiency. Vitamin D aids the body in absorbing Calcium from foods, which is important for proper bone development.

Babies, children and adults alike would benefit from 15 minutes of sunlight per day, in order to acquire the needed amount of Vitamin D. If needed, supplements may be taken or eating foods high in Vitamin D, such as Salmon and Cod Liver Oil is helpful.

Now we have another reason to encourage our children to go outside and play, they need their daily dose of Vitamin D and its organic! Model the beneficial behavior and get outside yourself, your body will thank you by maintaining healthy bones and immune system.

The Versatile Cucumber

The other night I had a dream about cucumbers. I was being served a huge plate of delicious, juicy sliced organic cucumbers--yes, I even dream organic! I am a huge follower of dreams, both in the sleep state and otherwise, and that being said, I pay attention when a food comes up in my dreams. Upon waking I ate sliced organic cucumbers and I dined on them again this morning.

When researching their many benefits, I was amazed at what cucumbers bring to the table in terms of health and vitamins. Cucumbers are rich in Vitamin C and have been used for centuries to bring down inflammation and fevers in the body. They have cooling properties, as well as cleansing, and work well to assist the body in ridding the skin of disorders. Naturally a diuretic, cucumbers act as a tonic to the kidneys. They can also be used to treat arthritis and gout. Drinking fresh organic cucumber juice daily works exceptionally well for those who are suffering from arthritis. The versatile cucumber will further assist those with lung and chest conditions. The digestive tract also benefits from this wonderful vegetable that hails from the squash and melon families, and individuals with ulcers, acid or heartburn will see relief when adding organic cucumber juice to their diet.

As many have seen in fashion magazines, cucumbers are also useful for bringing down inflammation in the eyes or relieving tired, strained eyes. Simply place cucumber slices over eyes, sit back and relax for a few minutes. When applied to skin, cucumber juice or fresh cucumber can also relieve sunburns. Juicing fresh organic cucumbers and drinking daily will assist the body with maintaining a healthy system. I have even heard that dried cucumber seeds will rid the body of tapeworm, good news for those who travel abroad.

For those still not sold on organic being better, here are the results of a study on the increased nutritional value of organic cucumbers as opposed to conventionally raised cucumbers. Going organic is the only way for me and my family!

Congress Doing Its Part

Congress has voted to ban 6 chemicals from the market in order to protect consumers from harmful toxins such as phthalates. Three of the chemicals will be permanently removed from the market place and the other three will stay removed until manufacturers can prove them to be safe. In the past, the chemicals had to be proven unsafe in order to be removed, but now it will be in the hands of the manufacturers to determine safety.

The article on this progress points out the dangers associated with the chemicals that are commonly used in plastics and the disastrous effects on consumers, especially infants and young children. Leo Trasande, a pediatrician and environmental health specialist at Mt. Sinai Hospital in New York, states: "We're engaged in a giant, uncontrolled experiment on America's children. Based on the evidence we have to date, a stronger approach is needed."

I read information on the dangers of these plastics ten years ago and removed all plastic toys from my home. We don't use plastic ware, plates or cups either due to the problem of the plastic leaching toxic chemicals into the food and beverages. Yes, my children actually learned how to drink out of a glass or stainless steel cup. I found wonderful websites that sell natural toys made from fibers such as wool or cotton and wood. Magic Cabin Dolls has a fantastic selection, as does Rosie Hippos. Honestly, there are so many sites now that cater to natural toys and products that are safe and well-made. For drinking bottles, we use Klean Kanteen, which are stainless steel and fabulous.

Although it has taken well over a decade for Congress to take some action, I am impressed and pleased that the effects of harmful plastics is being made public and the general public is starting to be protected. Invisible Mothers

I came across this email and thought I would share with you all. For those who do not know, I am a single mother of three beautiful children and I am currently in graduate school to attain a Master's in Psychology. I have been under quite a bit of schoolwork lately and plan on posting more this week.

Hope you enjoy this as much as I did:

It all began to make sense, the blank stares, the lack of response, the way one of the kids will walk into the room while I'm on the phone and ask to be taken to the store. Inside I'm thinking, 'Can't you see I'm on the phone?'

Obviously not; no one can see if I'm on the phone, or cooking, or sweeping the floor, or even standing on my head in the corner, because no one can see me at all. I'm invisible, the invisible Mom.

Some days I am only a pair of hands, nothing more! Can you fix this? Can you tie this? Can you open this? Some days I'm not a pair of hands; I'm not even a human being. I'm a clock to ask, 'What time is it?' I'm a satellite guide to answer,’ What number is the Disney Channel?' I'm a car to order, 'Right around 5:30, please.'

I was certain that these were the hands that once held books and
the eyes that studied history and the mind that graduated summa cum
laude - but now they had disappeared into the peanut butter, never to
be seen again. She's going, she's going, she's gone!

One night, a group of us were having dinner, celebrating the return
of a friend from England. Janice had just gotten back from a fabulous
trip, and she was going on and on about the hotel she stayed in. I
was sitting there, looking around at the others all put together so well. It was hard not to compare and feel sorry for myself. I was feeling pretty pathetic, when Janice turned to me with a beautifully wrapped package, and said, 'I brought you this.' It was a book on the great cathedrals of Europe. I wasn't exactly sure why she'd given it to me until I read her inscription: 'To Charlotte, with admiration for the greatness of what you are building when no one sees.'

In the days ahead I would read - no, devour - the book. And I would
discover what would become for me, four life-changing truths, after
which I could pattern my work: No one can say who built the great cathedrals - we have no record of their names. These builders gave
their whole lives for a work they would never see finished. They made
great sacrifices and expected no credit. The passion of their building
was fueled by their faith that the eyes of God saw everything.

A legendary story in the book told of a rich man who came to visit the cathedral while it was being built, and he saw a workman carving a
tiny bird on the inside of a beam. He was puzzled and asked the man, why are you spending so much time carving that bird into a beam that
will be covered by the roof, No one will ever see it. And the workman
replied, 'Because God sees.'

I closed the book, feeling the missing piece fall into place. It was almost as if I heard God whispering to me, 'I see you, Charlotte. I see the sacrifices you make every day, even when no one around you does. No act of kindness you've done, no sequin you've sewn on, no cupcake you've baked, is too small for me to notice and smile over. You are building a great cathedral, but you can't see right now what it will become.

At times, my invisibility feels like an affliction. But it is not a disease that is erasing my life. It is the cure for the disease of my own self-centeredness. It is the antidote to my strong, stubborn pride.


I keep the right perspective when I see myself as a great builder.
As one of the people who show up at a job that they will never see
finished, to work on something that their name will never be on. The
writer of the book went so far as to say that no cathedrals could ever
be built in our lifetime because there are so few people willing to
sacrifice to that degree.

When I really think about it, I don't want my son to tell the friend he's bringing home from college for Thanksgiving, 'My Mom gets up at 4
in the morning and bakes homemade pies, and then she hand bastes
a turkey for 3 hours and presses all the linens for the table.' That would mean I'd built a shrine or a monument to myself. I just want him to want to come home. And then, if there is anything more to say to his friend, to add, 'You're gonna love it there.'

As mothers, we are building great cathedrals. We cannot be seen if
we're doing it right. And one day, it is very possible that the world
will marvel, not only at what we have built, but at the beauty that has
been added to the world by the sacrifices of invisible women.

Cranberries-not just for Thanksgiving Turkey!

Cranberries pack a powerful infection fighting ingredient. Best served as a juice or cooked for a sauce or jelly, cranberries are plentiful in Vitamins A and C. They also contain significant amounts of Oxalic Acid, which aid in preventing kidney stones. Other properties of the cranberry includes: controlling asthma, improving circulatory health, treating prostate problems and aiding the urinary system. The ingredients in cranberries actually act a bactericide and change the acidity of the urine, which treats urinary tract infections. For asthma attacks, crush cranberries, boil in distilled water and skin them. Add the concoction to warm water and drink to control asthma.

Fresh organic cranberry juice is best, and a glass of cranberry juice per day will greatly benefit your health. Due to containing high levels of Oxalic Acid, cranberries should not be eaten raw. When purchasing cranberry juice, it better to pick a brand that does not contain sugar. Cranberries can also be taken in concentrate form like CranActin, which has a tasty chewable. The chewables work well for children or those who cannot handle the juice form.

I often purchase fresh, organic cranberries at my local health food store and make a lovely sauce for any poultry dish. It offers a beautiful color and flavor to our succulent dishes. I enjoy the tartness and texture of fresh cranberry sauce, so much better than the canned gelatinous mass from Grandma's turkey day table. So, go ahead and enjoy your cranberries year round, not just for the holidays!

FDA Stepping Up?

Pediatricians urge the FDA to recall cold medicines for young ones, but will the FDA side with the manufacturers of cold medicines or with the recommendations of pediatricians? Apparently, no studies were ever conducted on cold medicines for children and the risks and effects on a child's immature system. The industry, of course, states they are safe, but the doctors aren't buying it and are demanding a recall. Cold medicines are a big business for manufacturers, who market to the parent's need to fix the symptoms of a cold.

Parents must educate themselves and remember that the symptoms of a cold are just that symptoms. They are the body's natural defense against an invader. Doctors recommend rest and lots of fluids for a reason. Most colds cycle out within 2 weeks without any medications. The runny nose and coughing is the body's way of purging the foreign virus and should not be stopped with medications. Symptom relief does not mean that it is beneficial or healthy for the body. It would be more beneficial to boost the immune system with Vitamin C, echinacea, astragulus, raw honey, or oil of oregano. Make sure that you follow dosages set for children which is usually 1/4 of an adult dosage. Always research the supplement before administering.

For a proactive immune builder during cold season, I give my children Ester C, Kyolic garlic tablets, acidolphilus and EFA's in the form of fish oil chewables. If the children do get sick, they stay home, rest, drink lots of water and herbal teas with raw honey and eat raw foods. It is helpful to avoid dairy and wheat as well during a cold since they tend to produce more mucous in the body.

Grapefruit-not just for dieting!

Grapefruits, especially the red variety, are one of my favorite foods. Eating grapefruit does help with reducing appetite and breaking down fat in the body, but it also cleanses the urinary and digestive systems. Many know of grapefruit"s Vitamin C content and the aid it offers to the body during times of colds or flu, but grapefruit also contains potassium and bioflavonoids. The pink or red grapefruit includes Vitamin A on its list of beneficial properties. Grapefruit is also used to treat osteoarthritis and balance the nervous system.

Among its uses, grapefruit seeds can rid the body of worms, and grapefruit juice can be used for acne and to rid the body of toxins as well as cleanse the kidneys. The membranes of the grapefruit lowers the cholesterol in the blood. Juicing for Health recommends grapefruit for those who have diabetes or a tendency towards diabetes. They also recommend it for pregnant women to reduce water retention. Those with liver conditions could greatly benefit from grapefruit as it detoxifies the liver. It can also reduce the symptoms of hangovers.

Grapefruit essential oil is a wonderful addition to your supplements as it can lift your spirits when you are feeling melancholy. I enjoy putting it in my aromatherapy dispensers, it smells lovely. Rub it into your temples to relieve a headache or massage it into your body for an immune boosting tonic. Use it in a sick room for assisting those with a fever, cold or flu. Nature's Flavors makes a wonderful organic grapefruit oil that is fit for food consumption. I enjoy the Aura Cacia Organic Grapefruit essential oil, as it is reasonably priced and works well for aromatherapy and massage. I have a car diffuser that I use for essential oils aromatherapy while on the road. You can also pick up a room deodorizer diffuser that you plug into any outlet in the home. They are perfect for dispensing your organic grapefruit essential oil.

Here's a funny article from NPR regarding the aroma of grapefruit. Apparently, when women smell of grapefruit, men think they are about 6 years younger. So ladies, perhaps you can age gracefully and naturally with your grapefruit essential oil in tow.

Whether you eat it, drink it, massage it or diffuse it; grapefruit seems to be versatile in its health benefits for the body, mind and spirit. I think this may be a good year to plant a grapefruit tree!

Natural Flea Repellent for Your Pets

While flipping through my copy of "Better Basics for the Home" by Annie Berthold-Bond, I came across a simple way to keep those fleas from thinking your beloved pet would make a great feast. She suggests a Rosemary Rub, which consists of 1/2 teaspoon of rosemary essential oil and 1/2 cup of olive oil. Put the ingredients into a glass jar and shake. Using a cloth, add few drops and rub into your pet's fur. There are many essential oils that naturally repel fleas, such as camphor, pennyroyal, sage, catmint, southernwood, rue, feverfew, eucalyptus, black walnut tree leaves and tansy. Citrus oils also work well, but should not be used on cats. You can add a few drops of any of the above oils to your pet's shampoo as added protection.

Diet and nutrition are also important when keeping the biting insects away. Add garlic, vitamin supplements and essential fatty acids to your pet's food. Brewer's yeast works well for some pets as well. A healthy pet will not be candidate for an invading parasite, the blood sucker will move on to a more sickly animal.

Making a Stand Against High Fructose Corn Syrup

I recently came across this article about a supermarket called PCC Natural Market banning all products containing High Fructose Corn Syrup. I have avoided products containing High Fructose Corn Syrup for years, and it takes constant perusing of ingredient listings to ensure that my family steers clear of it. High Fructose Corn Syrup has been linked to early diabetes and obesity. Natural sweeteners like pure cane sugar, maple syrup, turbinado sugar and rice sweeteners are much healthier choices.

According to the Mayo Clinic, the sweetener is derived from cornstarch. The process changes the sugar in cornstarch into fructose, which makes it a cheap alternative to regular sugar. For those living a natural lifestyle, it would be best to avoid this processed sweetener, especially in light of many corn crops being genetically modified. The Mayo Clinic recommends limiting your intake of High Fructose Corn Syrup, I would remove it all together, your health is too important.

Another article called The Murky World of High Fructose Corn Syrup outlines the details of the manufacturing of the sweetener. It is worth the read and especially interesting is the study done on rats given fructose versus glucose. The fructose rats suffered immensely in the health department, and fructose is what many doctors recommend for diabetics. Choose your foods wisely for yourself and your family.

Native Ways

What a fantastic weekend was had at a local Pow Wow in Odessa, Florida. My children and I met up with my parents on Saturday and Sunday to enjoy the festivities and absorb some of our native culture. Grand entry was at 1 PM and 7 PM on Saturday and at 1 PM on Sunday and honored our veterans and active duty soldiers. After opening ceremonies, we enjoyed various displays of popular Native American dances such as men's traditional, men's fancy, men's straight dance, men's Grass Dance, women's traditional in buckskin or cloth, women's fancy shawl and women's jingle dress dance. The regalia for each individual dance is vastly different and personalized for each dancer and often the items that adorn their outfit have been handed down from generation to generation. It is important to note that the attire worn during these ceremonies are not costumes which would imply the individual trying to be someone they are not, the clothing is called regalia. While it is appropriate to take photos during certain parts of the pow wow, picture takers should ask an individuals permission before singling them out for a picture.

There were numerous vendors displaying Native American wares such as jewelry, knives, arrowheads, children's toys, crystals, blankets, spears, animal artifacts, clothing, leather, dream catchers, Native American crafts and wooden items. The food vendors sold buffalo burgers, Indian fry bread, ice cream, Indian tacos, hot dogs, hamburgers, french fries, BBQ and kettle corn. We also saw various birds of prey including a bald eagle named Thunder.

In Florida, the Native American Pow Wows run from September to April, in order to avoid the excessive heat of the summer. If you want to find local Pow Wows for your area, 500 Nations is a good place to start. The Florida Pow Wows are listed, as well as state by state listings. Since it is up to individual promoters to list their pow wow, not all pow wows are listed, but it does include most of them. Renaissance Style

In Downtown Safety Harbor last night, the pirates invaded the city and stole the King and Queen's daughter, Rapunzel. The court was beside itself with despair, but banded together determined to gain the Princess Rapunzel back from the pillaging pirates. The knights dueled to see who was fit to win her back and a victor was announced. After the duel, the court entertained itself with singing an Italian opera love piece, playing chess, a magic show, belly dancing and comedy sprinkled throughout it all.


Prior to the kidnapping the court was entertained by a beautiful melodies from the harp players and dangerous creature great and small from abroad. The King's travelling adventurers brought back a hawk, owl, exotic birds, flying squirrel, a bird from prehistoric times and a seventeen foot snake! The King and court were much impressed with the traveller's findings.

In the end, the lovely Princess Rapunzel was returned voluntarily by the pirates. Apparently, she had eaten them out of ship and home. The pirates could not afford to keep her on board any longer. Rapunzel had been won over by the pirates and was much upset upon being returned to the court. The King and Queen were relieved that their lovely Princess was saved and they were determined to convince her to marry a Prince of royal blood.






And they all lived Happily Ever After!

Claude's Vinaigrette

I haven't purchased store bought salad dressing in years, except for the occasional ranch or Caesar dressing. For all our salad needs, my family uses my homemade salad dressing. I am frequently complimented when others taste the wonderful concoction of flavors. I have to admit, it is tasty.

In the spirit of Naturally Living, I thought I would share my secret recipe with you today. It is simple, fresh and easy; and it tastes better if using organic ingredients. Mix it up in a salad dressing container for easier dispensing or if you don't have one on hand, use a glass jar with a lid, so you can shake before serving.

Claude's Vinaigrette

1 cup of Extra Virgin Olive Oil
1/2 cup of Apple Cider Vinegar (I use Bragg's, its the best)
1 teaspoon mustard powder
1 teaspoon dried basil
1 teaspoon dried thyme
2 cloves of fresh garlic, minced

Put all together and shake. The flavors will meld together the longer it sits, so the flavor improves with time. Keep it in the fridge and take it out a few minutes before use. Sometimes if the refrigerator is cold, the oil may harden a bit but will become liquid again if left out or if the jar is run under running water.

We use this dressing a few times per week and especially enjoy it on a romaine salad with carrots, cucumbers, red cabbage and shredded percorino romano cheese. It is delicious! Once you try this fresh, homemade dressing, you'll never be satisfied with store bought again.

Has the King left the Building?

In light of the last post, I decided to research the "King of Nuts" a bit more. Currently, there appears to be much controversy in the world of nuts. Due to some non-organic almond growers fertilizing with fresh manure and then allowing their nuts to sit on a truck in the heat for days under a plastic covering, some consumers have contracted Salmonella. Although it seems obvious to stop the practice of fresh manure and use composted manure instead, the industry pushed for the use of propylene oxide on the almonds after they are picked. This toxic chemical is classified as a carcinogen and has been used as an explosive and a racing fuel, and now the FDA has approved it for pasteurizing raw almonds. A press release from the Living Tree Community provides detailed information regarding this unacceptable situation.

An article by the San Francisco Chronicle details the chronological timeline of this decision to sterilize almonds in order to avoid future Salmonella outbreaks. Even though the organic almonds are not to blame for the two outbreaks in 150 years, they also must be submitted to high heat in order to kill any bacteria. For raw foodists this is a problem and threatens the existence of raw almonds. For additional information, the Living Tree Community has posted numerous articles relating to this issue and the possible extinction of raw organic almonds.

One thing is for sure, buying organic will still save you from unnecessary chemicals, but it may not protect your raw food choices.

The King Among Nuts

In the kingdom of nuts, the almond reigns high over his subjects. The almond tree is the oldest nut as well as the most popular among growers of nuts. It is no wonder that it is so coveted and honored, it packs a powerful punch nutritionally and is versatile in cooking and baking. Almonds can be added to baked goods, treats and sweets, as well as, salads or rice pilaf.

Nutritionally speaking, almonds are high in protein and a must have in a vegetarian diet. They reduce inflammation and aid in digestion, respiration and the treatment of bronchitis. Rich in B vitamins, zinc, fat, potassium, magnesium and protein; almonds can easily be incorporated into many diets. Almonds are also rich in absorbable calcium, which make them an excellent substitute for dairy and milk products. The amino acids that are also a part of this wonderful nut are Phosphorus, L-Arginine, and L- Phenylalanine, which aid the body in forming teeth and bones, energy production, fighting fatigue, boosting immunity, inhibiting tumor growth, healing wounds, protecting the liver, alleviating depression, increasing mental alertness, and reducing hunger. Nuts are also a wonderful source of dietary fiber which helps control diabetes and weight gain as well as protecting against cancers of the colon. Used to heal the body internally and to prevent fevers, it is no wonder this nut is called the "king of nuts".

Our family chooses almond milk as an alternative to cow's milk. It is a wonderful addition to pancakes, french toast, coffee drinks, baked goods and cereal. Almond milk can also stand on its own with perhaps a side of homemade chocolate chip cookies, organic of course. It can be purchased at your local health food store and is now available at grocery and super stores. Here is another healthy option:

Blend together 6 tablespoons of almonds with 1 pint of water and one teaspoon of honey in a blender or food processor. Use a sieve to strain the mixture and drink. Have leftovers? Put in refrigerator for another day.

Another great way to get you daily intake of almonds is with almond butter. Like peanut butter, the nuts are ground to a spreading consistency and are a great substitute in sandwiches or as a dip for carrots and celery. Need a source for raw, organic almond butter? Try Rawganique.

Another Way to Be Green

If you are looking for an alternative to your morning cup of joe (although I don't know why anyone in their right mind would give up their coffee) or just looking to supplement your diet, green tea has much to offer. Unlike other teas which are fermented, green tea is made by steaming the leaves and parching them. This process allows the leaves to keep their beneficial qualities.

Studies have shown that the components in green tea can prevent cancer, as well as kill cancer cells but they do not harm the healthy cells. This research is based upon studies done at Purdue University. Additional studies indicate that the compounds in green tea also have antibacterial effects. Science Daily states, "Tea, according to studies, also can improve gastrointestinal function, alcohol metabolism, kidney, liver and pancreatic function, protect skin and eyes and alleviate arthritis. Tea has been used in managing and preventing allergies, diabetes, bacterial and viral infections, cavities, reduce or cure diseases with an inflammatory component and improve neurologic and psychological health." A researcher at Yale University of Medicine theorizes that the components in green tea could reduce cardiovascular disease, as evidence by the Asian culture having a low incidence of cardiovascular disease despite having a high incidence smoking, which leads to cardiovascular disease. According to Science Daily, further studies indicate that the ingredient in green tea combats breast cancer as well. Green tea has also been linked to aiding in weight loss and skin cell rejuvenation.

It seems that green tea is nature's natural elixir for what ails you. A cup a day could very well keep the doctor away.

A Moment in Nature

We live in a quaint little town nestled in Pinellas county and surrounded by busy cities. The town of Safety Harbor is right on the bay and it is simply wonderful. From where I live, we walk to downtown and the marina where there is a pier. We have brick lined streets, huge oak trees including one that is 300-500 years old. It is a quiet, peaceful town with friendly residents.

Today, my children and I took a walk to the pier donned with a fishing pole and a bucket of bait. My son had been asking me to take him fishing and I thought today would be perfect. The weather was beautiful, sunny with a slight breeze. The pier is covered, so I read my latest book, James Arthur Ray's Harmonic Wealth and watched my son fish. I had been reading in my book the importance of relationships with everyone in your life, and this was a perfect opportunity for me to sit back and enjoy being with my children.

While at the pier, we saw our friendly resident sea cows. There were four manatees that kept circling the pier and coming up for air. They would show off their tales and stick their whiskered snouts up high blowing out their air. The children loved it and I have to admit it was a truly naturally living experience. I made several attempts, along with other onlookers, to snap a picture of the sea cow family, but they seemed to escape the paparazzi.
I checked out the Save the Manatee site, a must see! The site is full of information on all things manatee and how we can help them, as they are in danger of being endangered. They are beautiful and gentle creatures and a joy to watch. I am so glad they blessed us with their presence today.

Human Nature

I just received this email from a friend and it caused tears to run down my cheeks onto my desk, I wish to share it with you all.....

At a fundraising dinner for a school that serves children with learning disabilities, the father of one of the students delivered a speech that would never be forgotten by all who attended. After extolling the school and its dedicated staff, he offered a question: 'When not interfered with by outside influences, everything nature does, is done with perfection. Yet my son, Shay, cannot learn things as other children do. He cannot understand things as other children do. Where is the natural order of things in my son?'

The audience was stilled by the query. The father continued. 'I believe that when a child like Shay, who was mentally and physically disabled comes into the world, an opportunity to realize true human nature presents itself, and it comes in the way other people treat that child.' Then he told the following story: Shay and I had walked past a park where some boys Shay knew were playing baseball. Shay asked, 'Do you think they'll let me play?' I knew that most of the boys would not want someone like Shay on their team, but as a father I also understood that if my son were allowed to play, it would give him a much-needed sense of belonging and some confidence to be accepted by others in spite of his handicaps.

I approached one of the boys on the field and asked (not expecting much) if Shay could play. The boy looked around for guidance and said, 'We're losing by six runs and the game is in the eighth inning. I guess he can be on our team and we'll try to put him in to bat in the ninth inning.' Shay struggled over to the team's bench and, with a broad smile, put on a team shirt. I watched with a small tear in my eye and warmth in my heart. The boys saw my joy at my son being accepted. In the bottom of the eighth inning, Shay's team scored a few runs but was still behind by three. In the top of the ninth inning, Shay put on a glove and played in the right field. Even though no hits came his way, he was obviously ecstatic just to be in the game and on the field, grinning from ear to ear as I waved to him from the stands. In the bottom of the ninth inning, Shay's team scored again. Now, with two outs and the bases loaded, the potential winning run was on base and Shay was scheduled to be next at bat. At this juncture, do they let Shay bat and give away their chance to win the game? Surprisingly, Shay was given the bat. Everyone knew that a hit was all but impossible because Shay didn't even know how to hold the bat properly, much less connect with the ball. However, as Shay stepped up to the plate, the pitcher, recognizing that the other team was putting winning aside for this moment in Shay's life, moved in a few steps to lob the ball in softly so Shay could at least make contact.

The first pitch came and Shay swung clumsily and missed. The pitcher again took a few steps forward to toss the ball softly towards Shay. As the pitch came in, Shay swung at the ball and hit a slow ground ball right back to the pitcher. The game would now be over. The pitcher picked up the soft grounder and could have easily thrown the ball to the first baseman. Shay would have been out and that would have been the end of the game. Instead, the pitcher threw the ball right over the first baseman's head, out of reach of all team mates. Everyone from the stands and both teams started yelling, 'Shay, run to first! Run to first!' Never in his life had Shay ever run that far, but he made it to first base. He scampered down the baseline, wide-eyed and startled. Everyone yelled, 'Run to second, run to second!' Catching his breath, Shay awkwardly ran towards second, gleaming and struggling to make it to the base. B y the time Shay rounded towards second base, the right fielder had the ball . the smallest guy on their team who now had his first chance to be the hero for his team. He could have thrown the ball to the second-baseman for the tag, but he understood the pitcher's intentions so he, too, intentionally threw the ball high and far over the third-baseman's head. Shay ran toward third base deliriously as the runners ahead of him circled the bases toward home. All were screaming, 'Shay, Shay, Shay, all the Way Shay' Shay reached third base because the opposing shortstop ran to help him by turning him in the direction of third base, and shouted, 'Run to third! Shay, run to third!' As Shay rounded third, the boys from both teams, and the spectators, were on their feet screaming, 'Shay, run home! Run home!' Shay ran to home, stepped on the plate, and was cheered as the hero who hit the grand slam and won the game for his team.

'That day', said the father softly with tears now rolling down his face, 'the boys from both teams helped bring a piece of true love and humanity into this world' Shay didn't make it to another summer. He died that winter, having never forgotten being the hero and making me so happy, and coming home and seeing his Mother tearfully embrace her little hero of the day!

Ok, so I just had tears again re-reading it for this post. This is a beautiful story of naturally living in the human spirit. Enjoy!

Naturally Colored Birthday Cake

As I start to plan my son's seventh birthday, I am thinking about what kind of cake to make for him. For most people, this means going to your local supermarket and picking out a cake laden with artificial colors and preservatives. I know it seems like a lot of work, but making your own cake can be fun and give you a chance to be creative, plus you can pick the ingredients. I take a basic cake recipe and use organic ingredients. For the frosting, I use my grandmother's cream cheese frosting recipe and add natural items for color. I have used beet powder or beet juice for varying shades of red and pink, and I use chlorophyll for shades of green. You can also use cocoa powder for a chocolate flavor and to have another color variation.

Lately, I have seen natural food colorings in the health food store using the same ingredients as above or other natural food sources. The brand name is Seelect and they are located in the baking section of the store. I have seen colors for red, yellow and blue. They are also available on Amazon. There are companies that make natural colored sprinkles and confetti to add to cookies, cakes and ice cream. I have used these as well and the kids love them.

With school bake sales, class parties and the holidays, these natural colors are great ways to add the wonderful colors without the artificial ingredients. The natural colors look more real as well. Years ago, I took a cake decorating course with the local craft store and we had to make and decorate our own cakes and bring them in to show the class. I used natural colors and the other students asked what I used, that it looked great and kind of Victorian. The colors aren't as bright and fake looking.

Here is one of cakes I have made last year:
I used a yellow cake recipe with cocoa added to cream cheese frosting. Then I used the natural sprinkles on the top and around the edges. It was simple, quick and easy, as well as delicious. In addition to organic ingredients and all natural colors, replacing sugar with applesauce and honey is a healthy alternative. Spelt flour has more health benefits than wheat or white flour and can be substituted for regular flour and purchased at your local health food store.
There are many ways to go natural for birthday parties, besides wearing your birthday suit!

Essential Fatty Acids

I know that many of us have heard about the benefits of EFA's (Essential Fatty Acids) for brain health and many adult ailments in bones and joints. With school starting up, I thought we might talk about the benefits of fish oils to our children. Concentration and attention are key to a successful academic career, yet many children are physically incapable of sitting still and learning. Studies are now being done to show that many children are lacking the nutrition needed to ensure their health. Children that are diagnosed with behavioral problems, dyslexia, ADD and ADHD have been shown to have low levels of the Omega-3's, which are found in fish oils.

Pregnant and breastfeeding mothers would do well to make sure they are eating safe fish or taking supplements that contain these important EFA's. Young toddlers and children also need to have safe supplements of the Omega-3's in their diet. Fish oil supplements have actually reversed the effects of many behavioral problems in children. Taking fish oils daily, along with a healthy organic diet of fruits, vegetables and whole grains will guarantee your child a positive start in their educational development.

One brand of fish oils that I prefer is the Nordic Naturals brand because they offer a high quality fish oil free of contaminants. They also offer a wonderful children's chewable softgel that is strawberry flavored. My son asks for it frequently and loves it. If you want to eat your fish instead of taking a supplement, you should know to avoid or limit your consumption of the following: fresh tuna, king mackerel, shark, swordfish, and snapper. Drunken Sailors

One way to get rid of those pesky bugs known as roaches and palmetto bugs is to drink them under the table. If you live in the south in the summer, you know that no matter how clean or careful you are, those critters can get into your home. A safe, non toxic way to purge them from your home is to get them drunk on beer. Yes, that's right, beer. Have them belly up to a saucer of beer and they will drink until they die. Just place a low saucer full of beer out and once they are drunk, toss them out. That's it! It is economical too, as long as you serve them the cheap stuff. I hear they don't tip too well, but that's ok because they don't come back once they are drunk.

Take Your Breath Away

Every wonder if you are offending others when you speak? I'm not talking about putting your foot in your mouth, I am talking about halitosis. It may be acceptable for Fido to offend others with his panting aroma, but we expect more from our human friends. An easy and natural way to eliminate bad breath, is to make your own concoction with which to swish your mouth. The key is to use natural essential oils that kill the odor causing bacteria. Some of the oils that can be used for killing bacteria are cinnamon, clove, rosemary, tea tree and lavender.

Annie Berthhold-Bond suggests a couple of homemade recipies for a natural and refreshing wash for the mouth:

Grapefruit Seed Wash

1/2 cup of water

25 drops of grapefruit seed extract

15 to 20 drops of essential oils (peppermint, clove, cinnamon)

Combine the ingredients and swish in your mouth. Spit out. Do not swallow. Grapefruit seed extract is an antibacterial and will help eliminate the bad breath.

Another suggestion:

1 cup of water

10-20 drops of essential oil (cinnamon or clove)

Combine, swish and spit. Do not swallow.

Chewing on cardamom seeds, cinnamon sticks or clove buds will also take care of the offending odor. Remember that essential oils are strong, so use with caution. Keep away from eyes and sensitive areas. If possible, choose organic essential oils, its good for you and the environment.

Red and Green

We are deep into the days of summer with hot days and lazying by the pool, yes, I said lazying-it is a word. Maybe you like to swim in the pool or the kids are taking swim lessons, either way, you are encountering a nasty, toxic chemical called chlorine, and perhaps your hair is turning that lovely shade of summer green--yuk!

I am not going to get into the reasons why chlorine is unbeneficial, we can save that for another post. I will give you a remedy to get that green tinge from your lovely tresses. You need to use the red to get out the green, kind of like a "Christmas in July" theme, with tomato juice. This recipe comes from Annie Berthold-Bond, in her book, "Better Basics for the Home".

Here it is:

1/4 cup of tomato juice

Put tomato juice onto wet hair and massage scalp. Leave it on for a few minutes, then wash as usual. Celery stick and booze optional--joking!

That is it! Easy, simple and basic. Kind of brings new meaning to knocking your head and saying: "I could have had a V-8". Ok, I better go, I am getting silly....

Steamy and Hot!

Natural facials are both steamy and hot. The health of benefits of such can be seen and felt immediately. Facial steams open up the pores and hydrate the skin while deeply cleaning. They will leave your face feeling clean and wanting more.

To take advantage of the benefits of a natural steam facial, use fresh bottled, spring or well water and no chlorinated water. Put the water in a pot, add fresh herbs, such as: lavender, chamomile, lemon balm, witch hazel, mint, rosemary, tea tree, sage, berry leaves, yarrow, comfrey, aloe vera, calendula, nettle, rose, St. John's wort, bay, red raspberry, myrrh or colt's foot and bring to a boil. Of course, do a mixture of these herbs that you like and enjoy, not all of them all at once. After the herbs and water come to a boil, simmer them for a few minutes to allow the herbs to infuse into the water. While it is simmering, pull your hair back off your face and wash your face. When ready to steam, place the pot on a heat-safe potholder or towel and lean over the steamy herbs with a towel hanging over your head to hold in the steaminess. Keep your head in the steamy tent for about 5 minutes. If you like, close your eyes and breathe in the beautiful aroma of fresh herbs. Relax....

When done, rinse with cool water and use an astringent on your face to close the pores. You can also add licorice root into your steam bath, it is one of the most useful herbs for steaming. Another steam facial option is to soak a towel with hot water and place gently over your face for about 2 minutes or until you are done.

Whatever you choose, your pores will thank you. If you like steam facials, try a full-body steam at your local gym--wow!

Tiny Bubbles

Ever wonder what makes your toothpaste, shampoo or liquid soap bubble? It's a toxic chemical called sodium lauryl sulfate, and it can cause eye irritations, dry hair, hair loss and allergic reactions. When mixed with other commonly used chemicals in cosmetic products, it causes the formation of nitrosamines, which are known carcinogens. The chemicals that can combine to form these cancer causing substances are TEA (triethanolamine), DEA (diethanolamine), or MEA (monoethanolamine). Although sodium lauryl sulfate is not considered a carcinogen, it is a suspected liver and gastrointestinal toxicant, and it is regulated as a pesticide!

If you must use products containing this harmful chemical, you can add Vitamins A, C and E to your sudsy concoction. They are antioxidants and will help protect you from the nitrosamine contamination that forms with this chemical combination. In "Better Basics for the Home", Annie Berthold-Bond suggests adding the following to any 8 ounces of cream or oil: 1 teaspoon of Vitamin C powder, 1/4 teaspoon of Vitamin A powder, and 1 tablespoon of Wheat Germ Oil (for the Vitamin E). This combination is also useful for naturally preserving your homemade cosmetics.

Another option is to make your own shampoos and soaps, which can be fun and a great way to make the products you want and catered to your body. A book which I absolutely recommend for making your own cosmetics is "Better Basics for the Home", by Annie Berthold-Bond. The author also has a fabulous website called "Care 2", which I receive periodic emails in regards to all things green.

Yet another way to avoid those sudsing substances is to buy from cosmetic lines that avoid using them, and instead use herbs and coconut oils as a base. One brand that I like for shampoo is Aubrey Organics, which you can find in any health food store or online. Other brands are Kiss My Face, Logona and Real Purity. For toothpaste, I choose Weleda, but other options include Tom's of Maine, which uses a sodium lauryl sulfate derived from coconut instead of petroleum, and The Natural Dentist. Once again, these products are available online, as well as, many health food stores and grocery stores across the country.

So, suds up, but do it safely and the green way. Save those bubbles for your next celebration and make a toast to your health!

Aloe-nature's medicine

Succulent and tropical, Aloe Vera is one of nature's medicinal plants. It can be used internally and externally to treat numerous common ailments. The properties of the aloe vera plant include: antifungal, antiseptic, cooling, soothing, and cleansing, especially to the liver, stomach, spleen, kidneys and bladder. The ancient Greeks used the aloe and there are approximately 200 species of this cactus-like plant in Africa. It grows wild in Florida and makes a great household plant.

The uses for aloe include: sunburn, cuts that are infected, ringworm, shingles, acne, wrinkles, burns, dry or itchy skin, insect bites, over exposure to x-ray, eczema, sore gums and candida or thrush. Many people take the juice of the aloe internally to aid in digestion, organ support and to treat irritable bowel syndrome. The juice can be purchased at any health food store or online. Java Junkie

From the word in Arabic meaning "excitement", coffee is a beverage of choice for many people and it crosses over numerous cultural lines. It is enjoyed all over the world and can be ordered any place you visit. It is common knowledge that coffee keeps you alert and many claim that their day does not begin until they have had their "cup of Joe".

But did you know that coffee contains antioxidants? Yes, those little guys that help protect you from free radicals (and I don't mean a band of politically crazy men hiding in the woods in camouflage waiting to ambush you). Whether you drink decaf or regular, antioxidants are there in that cup preventing cancer, heart disease, diabetes, liver disease, stroke and gallstones. Antioxidants also decrease the effects of aging. Spacing out your coffee drinking throughout the day will give you the benefits longer, all you need is a couple of cups per day.

So, go ahead, pick up that Mocha at Starbucks or brew a fresh pot of organic, fair trade coffee, then sit back and allow your body to receive the full benefits of that wonderful, tasty elixir of life.

Flowers are a Girl's Best Friend!

We all love the beauty of flowers, whether they are expensive and wrapped in pretty tissue paper from our significant other or picked up on a walk and handed to us in a dirty chubby hand from our offspring. Flowers bring us beauty and joy, even the ones that are considered weeds! The best part is that many flowers are healing as well as beautiful. Chamomile is one of these flowers. Looking a bit like a daisy, it packs a medicinal punch and it definite calms what ails you. It is strong yet mild and can be used for comforting the newborns, as well as, the elders in your life.

Most people know about it's digestive properties and use it to calm tummy ailments. It can be used for nausea, indigestion, acid, heartburn and wind. It also has anti-inflammatory and antiseptic properties. I have successfully treated my child's conjunctivitis with a chamomile tea bag compress on the eye three times per day. It is especially helpful to calm children and babies down right before bed or anytime you or they are in need of some peaceful time. For children and babies, chamomile is especially helpful, as it can aid in teething, colic and fever. Infants do exceptionally well with chamomile. You can put a little brewed chamomile tea in an eye dropper and give to baby orally or put some in their bottle to calm and soothe. I use chamomile tea whenever my children are ill and they take it well and recover quickly from colds and earaches.

I like floating chamomile tea bags in my bath to promote relaxation or for itchy skin. I have heard that it can treat bruises and sprains when mixed with vinegar. It has even been used to prevent or remove gangrene, not that we have this issue anymore in our modern world, but it is interesting to note. It benefits the liver and spleen, and it is also useful for nursing mothers who experience uterine pains when feeding baby.

Chamomile is a beautiful and wonderful flower in it's own right and everyone would do well to have a little Chamomile tea tucked away in the pantry for whatever ails the family. Make it organic and the earth and your body will thank you. Add a little raw honey, even better!

Good Day, Sunshine!

I know I went on and on about the benefits of the sun, which are many, but now we have some hard data to support what we already know. Here is an article on a scientific study that supports that Vitamin D from the sun's rays are of utmost importance to your health. I just received this link, thanks to my sister--thanks, Jess! It confirms what we already know, the sun plays a part in our healthy immune system and naturally living.


Here are some highlights from the article:

*Women deficient in Vitamin D and that have breast cancer are more likely to die or have the cancer spread

*Women deficient in Vitamin D were more likely to develop breast cancer before menopause, be overweight and have more aggressive cancers

*Other studies have shown a link between cardiovascular disease and prostate and colon cancers


*Chief source of Vitamin D is sun exposure

*Vitamin D is not common in foods, although it is added to some foods

It is important to note that the Vitamin D in foods is not immediately available to the body and must be converted by the liver and kidneys to become active. The gallbladder plays an important part in this as well. So for those who have liver or kidney problems or have had a gallbladder removed, you need the sun's magical rays even more.

Idol worship? I think not! The sun, like all of creation, has its place in our beautiful world. So, feel it's warmth on your skin and bask in the healing rays for body, mind and soul. The sun, it's natural, it's organic and it feels wonderful!

Here Comes the Sun...

With the summer quickly approaching and us Floridians already heading for the beach, I thought I would talk about the benefits of sunbathing. The sun truly is a beautiful creation and it has a purpose both for us and the earth. There is a vitamin that we receive from being in the sun that we need to absorb calcium and phosphorus. I am speaking of Vitamin D and more specifically Vitamin D3, which you can only receive from the sun's rays being absorbed into your body through the skin. It is the natural form of Vitamin D and is the most active. When you receive Vitamin D from food or supplements, it is not active, your body has to convert it through the liver and then the kidneys before it becomes active.

If you go out in the sun 3 times per week for 15 minutes, that will be all the body needs to have adequate Vitamin D. The best times to go out are before 10 AM and after 3 PM, when the rays aren't as potent. That's it, and your body will be better equipped to have healthy bones, teeth and muscles. It also will enable you to prevent breast and colon cancer, osteoarthritis, osteoporosis, and hypocalcemia. Vitamin D also helps with the immune system and is needed for thyroid function and normal blood clotting. If you are suffering from liver, gallbladder or kidney problems, it is even more important for you to receive weekly sunlight, so you will not develop osteoporosis. Signs that you may not have enough Vitamin D in your body are as follows: loss of appetite, burning sensation in mouth and throat, diarrhea, insomnia, visual problems and weight loss.

Another benefit to sunbathing is that it feels wonderful. Give yourself 15 minutes per day to sit down and enjoy the fabulous gift of sunlight. You will feel energized and alive. Turn your face toward the sun, as the flowers do and know that all is well. Take your lunch break outside or sit in your backyard to open your mail. Incorporate the sun into your day, you need it.

If you do plan on staying out more than 15 minutes, Aubrey Organics offers a variety of wonderful sunscreens that are all natural. I use them and they work well especially on the children who are in and out of the water constantly. If you miss a spot and happen to get burned, use fresh aloe from your household aloe plant, and rub it generously all over the burn. For those who don't have an aloe plant, you must get one immediately, for the uses are many. Another way to help a burn is to mix up apple cider vinegar and water and put it on, you will smell like a salad, but it helps (my mother always insisted on this and we hated it as children, but as an adult, I like to smell--thanks mom!). Also, if you take a cold shower right away, it will stop the burning. Some people like to use a mixture of baking soda and cornstarch on a burn or bathe in it. But the best prevention to avoid a sunburn is to respect and honor the sun's power, and only go out for long periods of time in the morning or late afternoon.

The Darker the Better

The South American Indians, the Aztecs and the Mayans all partook in the benefits of "xocalatl" or the cacao plant. It is now called cocoa, which was a spelling mistake that stuck. The scientific name of cocoa is Theobrama Cacao, and Theobrama translates as the "food of the gods". The history of chocolate is fascinating and interesting, but the health benefits are amazing! Scientific studies have shown that, like green tea, raw and minimally processed cocoa contain flavonoids (no, these are not flavor crystals, they are antioxidants). The antioxidants in chocolate help increase circulation, decrease blood pressure, lower death from heart disease, improve function of the cells that line the blood vessels, defend against free radicals which lead to cancer, heart disease and stroke, stimulates kidneys and improves digestion, as well as, helping with anemia and kidney stones. It boosts the immune system and is a excellent source of copper, magnesium, iron, phosphorus and calcium. Yes, all this from chocolate, but it needs to be dark and minimally processed!

One chocolate that is minimally processed is Yachana Jungle Chocolate, which is made from cocoa nibs. Cocoa nibs are cocoa beans that have been fermented, dried and slightly roasted. I have had them and they are delicious! The Yachana Jungle Chocolate company is also heavily involved in preserving the rainforest, you can even adopt a cocoa tree.


But by far, my favorite chocolate bar is Green and Black's Organic 85% dark chocolate. They offer many delicious varieties, but to receive the full health benefits of cocoa, I suggest you try the darkest. They also sell hot chocolate, ice cream and baking chocolate, and it is all organic. This is fabulous chocolate and can be found at the health food store, online or even Super Target.

Being healthy is decadent, so indulge in the darkest chocolate you can find, it is truly "the food of the gods".

Sweet and in the Raw

It is the only way to go when we are talking about Honey. Yes, that all natural, sweet, sticky yumminess is best served unprocessed, unfiltered and in the Raw with all the beeswax, pollen, propolis and enzymes. Raw is the only way to go if you want the full benefits from nature's sweet nectar and the benefits are numerous and plentiful. The properties of honey are many including soothing raw tissues, retaining calcium in the body, balancing acid in the body, sedative, anti fungal, aphrodisiac, nourishing, antibacterial and antibiotic.

Some uses for honey are for hangovers (take a tablespoon of it), arthritis (mix two teaspoons with two teaspoons of apple cider vinegar and drink before each meal), burns (put a thin layer on the burn and the healing enzymes will do the rest), bed-wetting for children (give a teaspoon at bedtime and have dry sheets in the morning), and for constipation (drink warm water in the morning mixed with honey).

Honey should always be raw when used for medicinal purposes and local is best, as it contains the pollen of the plants in your area, which will better meet your particular health needs. Also, do not give honey to babies under one year, as it can cause serious illness for them.

One of the most common uses for honey is for coughs. The preparations are numerous, but they all have one thing in common, HONEY! You can put it in tea, put it in the middle of an onion and roast it or make your own cough drops with it. When my son was little, he had pneumonia a few times and seemed to have colds that would always get into his chest. I started giving him raw honey daily with the honeycomb still in it. He has never suffered from the ailment again. He still loves to eat the raw honey right out of the jar with a spoon. It is extremely beneficial for the respiratory system.

Honey will also stop bleeding on a wound and will aid in healing and prevent scarring. You can also use honey to treat hemorrhoids. Mix a tablespoon of honey with a half teaspoon of mustard powder and put on a cotton ball and apply to the area. Honey is also useful for indigestion, just mix a tablespoon of honey with a tablespoon of apple cider vinegar and put in a cup of warm water. Drink before you eat and you will be much happier after the meal.

As a aphrodisiac, honey has been used for centuries. Bee pollen is popular among some to increase their need for "the birds and the bees" (pun definitely intended!). You can also do like the Egyptians and mix your honey with sesame seeds (also known as Halvah), and then share this yummy confection with your lover.

Other uses for honey are for shingles, ringworm, athlete's foot, conjunctivitis, sores in the mouth or vagina, varicose veins and bruises. Apply the honey to the affected areas and cover if necessary. Another fabulous use of honey is for wrinkles. Spread the raw honey on your face and neck and leave it on for 20-30 minutes and then rinse with warm water. It will produce amazing results on your skin.

One weight control remedy is to mix two tablespoons of honey with one tablespoon of vinegar in a glass of grapefruit juice (no added sugar), and drink it before each meal. It melts away the fat and regulates the thyroid.

So, there you have it, to really enjoy honey, you must do it in the Raw and utilize all the benefits that nature intended.
